- 5 eggs
- 250g carrot pulp
- 140g sugar
- 160g ground almonds
- 100g cornstarch
- 2 tbsp lemon juice
- 1 tsp baking powder
- A pinch of cinnamon
- A pinch of salt
- Beat the egg yolks with the sugar until it becomes very clear then add the lemon juice. Keep beating.
- Add the carrot pulp, almonds, cinnamon, salt, cornstarch and baking powder, mix well.
- Whip the egg whites until stiff then gently fold them into the first mixture.
- Put the mixture obtained in a greased mold, bake at 180° for 50 minutes.
